Peaches and Cream Overnight Oat Parfait

Sadly we said goodbye to Forbes' sister yesterday.   I would like to call our week together a "divine intervention".  Karina is so full of joy and hope, we were blessed to be in her company for several days.  When it comes to marriage and relationships, she is so wise.  We relished in conversation with her to learn as much as we could before she left us.  What Forbes and I already had an inkling of, but now know with certainty is that we would like to model our marriage after Karina and John's.  They are such strong believers and walk in faith daily.  Karina has done so many wonderful things in her life, but she gives all the glory to God and I witnessed first hand just how strong her relationship with Christ really I said, we were blessed to be in her company this week!

With all the lessons she taught me over the course of the week...I couldn't let her leave without a lesson of my own.  So with our final day upon us and a little time before church, I whipped up a breakfast phenomenon that I'm sure she won't forget anytime soon!
Peaches and Cream Overnight Oat Parfait
serves 3-4

For the Overnight Oats
3/4 cup rolled oats
2 cups Almond Milk
3 tbsp chia seeds
1 tbsp honey
1 peach, diced

For the Banana Soft Serve
4 ripe bananas, sliced and frozen for at least 4 hours

Peanut Butter Magic Shell
Coconut flakes
More diced peaches

In large bowl or container whip together oats, almond milk, chia seeds and honey.  Stir in peaches and store in fridge overnight.

Peel and slice bananas and store in freezer bag or air-tight container in freezer overnight.

In the morning, process frozen bananas in food processor for 10-15 minutes, scraping down sides every 30 seconds-1 minute.  The bananas will form a fine crumb consistency and then continue to mix together to form a thicker consistency.  Finally they will begin to whip into a soft serve consistency and this when you know you are finished.

In 3 or 4 glasses or bowls, separate Overnight Oat mixture.  Divide Banana Soft Serve among glasses evenly and serve with toppings of choice.

Peanut Butter Magic Shell
2 tbsp coconut oil
2 tbsp Peanut Butter (or nut butter of choice)

Melt coconut oil and peanut butter in microwave together for 30 seconds.  Stir and heat an additional 30 seconds.

Pour melted ingredients over ice cream or banana soft serve.  When it instantly cools it will form a hard shell.
