Adventures

Have you picked up your copy of Peas and Thank You yet?  If not then you will have no idea how to make this delicious Tofu Ricotta Gnocchi.  And I'm not giving away the secrets!
The carrots on the other hand...well those were just peeled and zapped in the microwave until just tender.  About 5 minutes.  No brain surgery here...just delicious food!  Even the gnocchi was pretty easy to prepare.  Easier than I could have imagined.  I urge you to check out Sarah's book and give this recipe a shot!  It was so good!

In other news, Forbes and I spent a scorching afternoon traveling around Rowan County for an adventure. 
We were delivering information to schools about Girls on the Run, but took a few detours along the way.  Train rides and petting zoos included.

We packed a picnic lunch of our favorites: Eggless Salad and of course an Uncle Scott's Rootbeer.
Hurley Park in Salisbury is a great place for a picnic and a stroll. 
We claimed a spot in the shade and enjoyed our lunch.

Despite all the fun we had playing in Rowan County, the real adventure of yesterday was dinner.  We stole this idea from a restaurant in Africa featuring the "Elvis Pizza".  Of course we had to make one for ourselves.
Bananas on pizza!? Don't knock it until you've tried it! 
But once you've tried it, I totally understand if you decide to knock it.  It isn't exactly for everyone!

And now an even more fun adventure awaits us!  My big sister and little brother are on their way for a visit!  This is the first time Stephanie has been out to see me since my wedding so I am getting excited!  Let's be real, I've been excited since we first started talking about it.  Now I'm literally restless knowing in just a few short hours I will be picking them up from the airport.  I'm so happy I'm about to cry!
