Easy Eatin'

Sometimes I forget that it doesn't take a recipe to make a delicious meal.  I get so tied to ingredient lists and instructions that I fail to remember a great meal is just a combination of healthy, fresh and wholesome ingredients.  Today was a fresh reminder that a meal can be simple and still satisfying.
Lunch was an open-faced tomato sandwich on Pesto bread and a bowl of sauteed veggies topped with Easy Cheezy Sauce.

Easy Cheezy Sauce
serves 1

2 tbsp Nutritional Yeast
2 tbsp vegan mozz cheese
~1/4 cup liquid (use water, vegetable broth or non-dairy milk)
1 tsp Italian seasoning

Stir together and microwave for 2 minutes, stirring every 30 seconds. 

Spread over pasta, veggies, or use as dip

This lunch was so delicious and filling.  It was also quick and easy!

Dinner was another meal of fresh and whole ingredients.
The local corn on the cob was so sweet and crunchy.  We grilled it in the husks for about 15 minutes and served with an organic spinach salad.
We also grilled Tofurky Italian Sausages and served with mustard, sauerkraut and pickle relish. 
The corn took the longest to prepare...a meal in less than 15 minutes.  You can't beat that!

It's great to be home from the Healthy Living Summit, but now I am insanely busy!  This week I have meetings 3 nights and next week registration for Girls on the Run begins.  No rest for the weary!  Full steam ahead!
