Applesauce Micro-Muffin

Once upon a time I was obsessed with these little microwave surprises!  I mean, who knew you could have a home made muffin in hand in less than 10 minutes!

Past Micro-Muffin recipes have included the Banana Walnut.
And the Pumpkin Chip.
While Micro-Muffins may not be the prettiest treats out there (you may not want to serve them for company) they sure are tasty.  And when it is early and you are craving a decadent breakfast in a hurry, they sure do the trick!
It really is as simple as batter-in-a-mug.  Microwave for 3-5 minutes and you are set.  Well, at least your muffin is!

Applesauce Micro-Muffin
serves 1


When bored of your cereal and oats and looking for a great breakfast in a hurry, just mix together these ingredients and zap in the microwave for a quick and wholesome breakfast that satisfies your sweet tooth!

Prep time: 5 minutes
Cook time: 3-4 minutes

Ingredients:

1 Chia egg (1 tablespoon Chia seeds mixed with 3 tablespoons water)
1/3 cup unsweetened applesauce
1/2 teaspoon vanilla
1 teaspoon coconut oil + more for oiling cup
1 tablespoon peanut butter
½ teaspoon cinnamon
2 tablespoon whole wheat flour
1 tablespoon protein powder (I used Trader Joy's Vanilla Soy Protein Powder)
2 tablespoon rolled oats
½ teaspoon baking powder
1 tablespoon chocolate chips (optional, but highly recommended!)

Directions

In small bowl, measure chia seeds and water and mix together.  Set aside for 1-2 minutes.

Mix applesauce, vanilla, coconut oil and peanut butter together with Chia egg.

In separate bowl, whisk together cinnamon, flour, protein powder, rolled oats, and baking powder.

Mix wet ingredients into dry and stir until just combined.  Fold in chocolate chips if using.

Use a small amount of oil to grease the inside of a coffee mug.  Pour batter into mug.

Microwave for 3-4 minutes.  If you like a more doughy, moist muffin stick to the shorter end.  If you like a dryer muffin go 4 minutes.

Eat muffin straight out of mug, or use plate.
