Fuel and Hydration

Mmm...don't those look yummy?  Well I hope they do anyhow!  My at home, no campfire but surefire way to enjoy s'mores- a summer staple.  This time I did make them entirely vegan, unlike last weekend's treat!  My trick, just stick them under the broiler for 3 minutes or until the marshmallows are good and toasted.  Delicious!

Before the epic dessert last night, we did manage to squeeze in some wonderful veggies!
Oh, how I wish I could post a recipe for you this evening, but my Zucchini "Crab" Cakes just didn't turn out like they should have.  A little too mushy in the center.  Still delicious, but not recipe worthy.  I'm sorry!  I did a google search to find some inspirations and these are the ones I found so check them out if you are interested!

Peaceful Table

We served our vegan crab cakes with roasted and mashed beets, kale chips, and a side of corn on the cob.  These were the best beets I have ever eaten, and while they took quite a while they are definitely worth the work!

Mashed Beets
makes 2 servings

2 beets
olive oil
kosher salt

Preheat oven to 400* (or you could also cook these on the grill to keep your house cool)

Poke fork holes all over beets (with skins on).  Rub each down with olive oil and a sprinkling of salt.

Roast in the oven for 45 minutes.  Remove and let cool.  (We let ours cool overnight in the fridge at this point).

Once cool, peel and remove skins.  Dice the beets and sprinkle with a little more olive oil and salt in a baking dish.  Cook at 350* for an additional 30-35 minutes.

Remove beets from oven and place in bowl.  Use potato masher or fork to mash the beets.  They will still be chunky when you are finished.

Serve beets as a side with your favorite vegan meal!

Today we had a repeat of "crab" cakes.  After they sat in the fridge for overnight, the center firmed up quite a bit making for a delicious cold sandwich for lunch today!
I topped mine with some of the Tomato Basil Pesto leftovers, green tomato slices, and Peri-Peri sauce straight from Africa.

Our meals around here have been so fresh and flavorful this week!  I am living in my own vegan slice of heaven!  It's a good thing I'm enjoying my food because it has fueled some pretty intense workouts this week!  Yesterday we made our way back out to the track for sprints, bleachers and circuits.  Today I braved the heat for a long ride with friends in the foothills of the mountains.
Along the way we stopped for water and ice at the Turkeyfoot Country Market.  That is how far out in the boonies I was!  We had a great ride and I am currently chugging water like it is going out of style to rehydrate!  With the heat index it was 103* during our ride.  Yikes!

With that said, it is time to refuel again.  I'm thinking a nice big chocolate protein shake is sounding awfully good right about now!
