Fruit Salsa and Gingerbread Spiced Chips

I am also hosting a raffle for a BRAND NEW TREADMILL to raise money for Girls on the Run.  Tickets are $5 (plus processing fees if purchased online) and we will deliver locally to the Iredell, Rowan, Charlotte area.  We could probably deliver as far as Boone, Winston-Salem, Rock Hill, etc.  If you are interested buy your raffle ticket now.  The drawing is on Saturday at the race and you don't have to be present to win!  (Fellow bloggers...please feel free to pass this information on!)

Raffle Tickets

So how many of you actually like Mondays?  Do you wake up with a "Case of the Mondays" or do you pounce out of bed ready for a new, exciting, challenging week?  My answer wavers between the two.  Some Mondays it is all engines ignited...others, not so much.  I treasure the weekends and time spent with Forbes, so when Mondays roll around I do sometimes dread him leaving for work and the imminent call of my office and the piled up emails.  Even so, this Monday started off fresh and I woke up excited for this coming week.  So many fun things to plan for!

But before I just skip right ahead, let me show you a few photos from a really fun gathering this weekend.
As much fun as I have spending time with Forbes, this weekend I prioritized girl time a little higher on the agenda.  Chrissy (pictured above) hosted a girl's night Ornament Exchange and Recipe Party.  We decided in advance what we were bringing, emailed her the recipe and all were exchanged at the party.  And we all brought an ornament to exchange along with our dish.
Amongst the dishes was this Roasted Corn Guacamole which combined the traditional dip with Greek yogurt and peas for a fun twist on the old favorite.  Although I typically stay away from dairy, I tried a taste and the yogurt adds a nice zing to this dish.

I really enjoyed Katie's Crispy Roasted Chickpeas.  The one time I attempted these I burnt them!  These are so fun to snack on.

To drink Chrissy provided Jolly Juice.
It was Jolly!  It is similar to a daiquiri but contains wine.

For my dish I replicated my friend Elizabeth's Fruit Salsa.
Fruit Salsa with Gingerbread Spiced Chips
serves 10-12

This dish is fresh and flavorful and perfect for your holiday parties.  The wholesome and delicious fruit will be a welcome balance to all the sweets this time of year!

Prep time: 20 minutes
 


 For the Salsa

Ingredients:
  • 1 cup chopped grapes
  • 1 cup chopped honey crisp apples
  • 1 cup sliced segmented orange
  • 1 cup chopped strawberries
  • 1 cup diced pineapple (fresh or canned)
  • 1/2 cup peeled and chopped kiwi fruit
  • 1/2 cup blackberries or blueberries
  • seeds from one pomegranate
  • 1/4 cup chopped pecans
  • juice from ½ lime
  • 1 tablespoon brown sugar
  • 1 teaspoon minced ginger
  • finely chopped mint, to taste
Directions:
  1. Mix together all fruits, finely chopped.  In separate bowl, mix brown sugar, lime and ginger.  Stir into fruit mixture and garnish with mint.  Chill and serve with Gingerbread Spiced Chips.

For the Chips

Ingredients:
  • 6 whole grain tortillas
  • ¼ cup melted butter
  • 1 teapoon molasses
  • 1/2 teaspoon ginger powder
  • 1 teaspoon cinnamon
  • ½ teaspoon freshly grated nutmeg
  • 1 tablespoon sugar
Directions:
  1. Whisk together melted butter and molasses.  Using a pastry brush, coat top of each tortilla.  Whisk together ginger, cinnamon and nutmeg with sugar.  Using a spoon or spice jar sprinkle mixture over melted butter.  Use a pizza cutter to slice each tortilla into 6 or 8 triangles.  Bake in a preheated 350 degree oven for 8-10 minutes.  Allow to cool and serve with chilled Fruit Salsa.
