The Small Appliance Queen

Lucky for me, my husband believes in rewarding a job well done.  Last night, Forbes entered carrying this dandy with him.  I have been wanting a doughnut pan for so long...but this is 3 steps above any ordinary doughnut pan.  Apparently he is very appreciative of the amazing birthday party I hosted!

The Babycakes Donut Maker bakes 6 perfectly sized mini treats in just four minutes!
I couldn't wait to try out the new appliance so obviously I had to have doughnuts for breakfast.
And I just had to play with the toppings.

Mini Cake Donuts
adapted from Peas and Thank You
makes 12 mini-donuts

1/2 cup oat flour (you can use rolled oats and process until fine)
1/4 cup whole wheat pastry flour
1/2 tablespoon baking powder
dash of salt
dash of cinnamon and nutmeg
2 tablespoons vegan butter melted
1/3 cup Almond Milk
1/4 teaspoon vanilla
1/4 cup sugar

Mix together wet ingredients, whisk together dry ingredients.  Stir until just combined.

Spoon dough into a plastic baggy and snip the corner.  Pipe 2 tablespoons of dough around each opening.  If using the babycakes, preheat before piping dough, and then cook for 4-5 minutes.  Remove from appliance and let cool.

If you are using a regular doughnut pan and your oven, follow the directions on Peas and Thank You

Peanut Butter Fudge topping
2 tablespoons peanut butter
2 tablespoons chocolate chips
1 tablespoon Almond Milk

Place all ingredients in bowl and microwave for 30 seconds, stirring every 15 seconds.  Spoon fudge topping on each doughnut.  Dip into a bowl of sliced almonds.

I also topped one with raspberry jelly and almonds and that was delightful!
So good and not too bad for you.  I ate my way through 4 and saved the last two for dessert tonight.

We have so many leftovers in our fridge, every meal I have eaten lately (with the exception of breakfast) has looked a little like this:
Salads topped with salads topped with hummus.  Welcome to my world.  Not a bad one to live in.

Another busy week is underway.  Tonight was the Girls on the Run Coach Appreciation Dinner and it was fabulous!  I love my job!  Have a good night!
