What I've (Been Eating) Wednesday



So to branch out from the traditional WIAW post...let me just show you what I've been eating!  I failed to document one day's worth of food this week.  I tried really hard on super bowl Sunday because I wanted to find out how much extra I would consume during that event.  But of course, by the time my first glass of wine was gone and the third trip to the snack table I failed to remember to snap any photos.

It may not seem like it on this blog much lately, but I am still passionate about delicious eats, new recipes, and kitchen experiments.  Forbes and I have been sharing the kitchen duties since we both have been so busy lately.  So for full disclosure, not all of these are my creations...the Avocado Chickpea Salad was entirely Forbes'.

In the breakfast category I have adapted Ashley's Protein Quick-bake to suit my needs.
This recipe combines the buckwheat flour with oats and just a little more flavor.  I have also started adding baking powder to make it light and fluffy.  For a quick breakfast try this Banana Walnut Micro-Muffin.

As I mentioned above, Forbes created this Avocado Chickpea Salad as another recipe in our every growing Chickpea Salad series. 
The sweetness from the apricots and crunch from the pear and walnuts made this a party in my mouth...seriously!  I used the salad to top spinach leaves, to stuff in a pita and even on a sandwich.  It is delightful!

We served extra veggies on the side but with all the veggies packed into these little balls there really is no need.  We loved the flavor and texture of these "meat" balls!

And one final recipe for the day:
All these recipes are great today, but I saved the best for last.  This is so amazing because it is so quick and easy to throw together.  Unlike the traditional Pad Thai, this one is packed full of veggies!  Try this Vegan Pad Thai version for dinner in a pinch!
