Vegan Nacho Cheese

Guess what?  I am still a runner...and apparently I eat cheese.
Vegan Nacho Cheese that is!  I often take nutritional yeast and mix it with various other condiments to create a dip for my veggies.  Sunday night my dip went from ordinary to extraordinary!  One taste and my taste buds were skipping a beat!  Nacho Cheese...it has been way too long!

Vegan Nacho Cheese

Cook Time: 1 minute

Ingredients (1 serving)
  • 1/3 cup Nutritional Yeast
  • 1/2 tablespoon shoyu (or soy sauce)
  • 2 tablespoons Daiya Mozzarella shredded cheese
  • 1 tablespoon vegan sour cream
  • 2-3 tablespoons water
Instructions
In small bowl mix nutritional yeast with shoyu sauce and 1 to 2 tablespoons water. Add cheese and sour cream and microwave for one minute. Stir until all cheese is melted. Add a few more tablespoons water to reach desired consistency.

Oh and about that running thing...Forbes and I took a 6 mile run/walk on Sunday!  Felt so good but my back was very achy.  I have been averaging one run per week for about a month.  It feels good to be moving again!  However, it is already having negative effects on my cycle once again. 

Today I have a massage schedule and I can't hardly wait!  Eleven will not get here soon enough!  This Tuesday morning is creeping by!  Enjoy the cheese!
