A New Vegan Loaf

The Marsha Challenge has been quite the challenge (duh!) these last two weeks.  Not only have I been pushed physically, but also mentally.  In agreeing to help my friend, I am cooking two meals a week for her and her family.  Cooking for others is challenging alone, but add in the components of making easily portable and reheated meals, liked by young children, and fitting all the Marsha Challenge guidelines...well let's just say I have my work cut out for me.  But let me also just say, that I am having a blast doing so!  Here is the latest in the Marsha Challenge meals:
This Vegan Loaf came together in a matter of minutes and while it takes a bit to bake, it is all hands-off.  I used my previous vegan loaf recipe as inspiration and adapted it to fit what I had in stock.  I hope you enjoy it as much as Marsha did. (And me...you know I had to taste test before handing out my goods!)

Vegan Loaf

1 package tempeh
2 cups oats (uncooked)
1 cup cracker or bread crumbs (you can use saltines, whole wheat crackers, your choice)
1 carrot shredded
1 tbsp vital wheat gluten
½ tsp salt
½ tsp baking powder
2 flax eggs
1/3 cup tomato sauce
2 tbsp tahini
3 tbsp red wine vinegar
2 tbsp shoyu sauce
Tomato-tahini sauce

Using a food processor or grater (or just your hands) grate or crumble tempeh in to large bowl.  Stir in oats, cracker crumbs, shredded carrot, vital wheat gluten, salt, and baking powder.  
In small bowl mix together your flax eggs (2 tbsp flax meal, 6 tbsp water).  When the liquid begins to firm into an egg-like consistency, stir in your tomato sauce, vinegar, shoyu sauce and 2 tablespoons tahini.  Add this mixture to your dry ingredients and stir until well-coated and mixed.  

Grease a loaf pan and add ingredients.  Smooth top and brush ~1/4 cup Tomato-Tahini sauce on top.  Bake in 350* oven for 45 minutes.  Serve with more Tomato-Tahini sauce.

Tomato-Tahini Sauce
1 can Tomato Sauce
~3 tbsp tahini

Stir tomato sauce and tahini together (add more or less tahini to fit your palate)
This meal is perfectly portable, easily reheated, and is a crowd pleaser.  I was sad to send this off and seriously need to remake it for Forbes and myself.  Until then, I will just settle in with another smoothie...
This blogger is in serious need of a Vita-mix!  Check out the over-worked food processor in the background and the chunks of spinach and blueberries in my smoothie!  I can only dream of smoothies as pure and wonderful as those on Peanut Butter Fingers!  We are getting ready to leave for Winston-Salem to have dinner at Whole Foods with Forbes' mom...I will be pining away over the Vita-mix the entire time I'm there!
