Just another day in the life of...

Breakfast was on the simpler side this morning.  By the time I finished working out I was on the hungry side and didn't have the patience for the stove or microwave.  Not that any of my breakfasts ever take very long, but this morning my stomach was urgent for food.  Just a simple bowl of cereal with bananas in Almond Milk.  I don't know about you but I like to flood my cereal in milk.  I want two spoonfuls of milk for every spoonful of cereal.  But that's just me.  Mr. Kummerow is exactly opposite.  He likes smaller amounts of milk.

I'm getting ahead of myself with breakfast.  I haven't even shown you dinner from last night yet.
Another simple meal.  Simple but delicious.  Brown rice, tofu and steamed bok choy.  I only steamed the greens for 3 minutes this time to maintain some of the crunch and it was much better this way.  Mr. Kummerow made the marinade for the tofu and it was delicious!  I will have to get the recipe for you but I believe it involved mustard and Shoyu sauce.
I sprinkled Ume Plum Vinegar over everything and it gave all the simple flavors and tart twist.
And then in a moment of weakness I spread this Trader Joe's White Bean and Basil hummus on top.
My other new Trader Joe's obsession is this bag of Monkey Business.
I can't walk by the pantry without grabbing a handful!
This is a must try combo: tart cherries, peanuts, banana chips and cacao nib clusters (raw chocolate). 

This morning's workout was a quick 2 mile run by myself followed by a Pilates class.  It was hard to find the motivation to run by myself but I knew I needed to if I didn't want to die at Saturday's 5k!  Just a reminder...if you want to run with me this weekend I will be at the "Get Your Rear in Gear 5k" in Charlotte.  That is my birthday present to myself!

Pilates has been my new favorite work out.  It is all core and despite being a straight hour of abs work, I am really enjoying it!  We have this fabulous Pilates instructor at my Y in Mooresville, Charmayne.  I highly recommend the class if you are local!

Alright, back to work now.  Just two more days until my birthday!


  1. I am so with you on drowning cereal! I started to get out of the habit though because when I would eat cereal as a child at my grandparents my grandpa would always make me drink the leftover milk. I hated it! (Now I love drinking the extra milk so I'm back to drowning it. :D)

  2. I used to go to Charmayne's class all the time before I became a YMCA slacker :) She is wonderful.
