Another Perfect Day

Luckily for me, yesterday involved many of my favorite things!  But the best of all was a day spent with Mr. Kummerow. 

We began our morning with a little green for luck on St. Patty's Day!
This was before breakfast and before our typical liter of water that we like to begin our day with. 
All decked out in green at 8am!

This was the real balance, however:
Nothing more lucky than a green drink on St. Patrick's day so we had two! 

St. Patty's Day Green Monster for two:

1 frozen banana
1 ripe banana
3 cups spinach
1/2 avocado
1 tbsp coconut oil
1/4 cup peanut flour
1 cup Almond Milk
8 ice cubes
Look, I match my smoothie! 
It has been so long since I have started my day with a smoothie, and it was excellent!  The weather was very warm and sunny so it was perfect!
We dined on the couch while catching up on some Regis and Kelly...Mr. Kummerow's request!
And we chowed down on the last of the Sunflower Banana Bread.  So tasty!

After we had our talk-show fill, the sun was streaming in so we took our fun day outside.  We drove to Latta Plantation which is in Huntersville to do some hiking.  The two trails we picked turned out to be pretty short, but we were able to get in a good hour long walk along the lake.
We were in Huntersville so naturally TCBY came up.  We are sticklers for certain rules, like no dessert until after a meal so unfortunately we had to eat some pizza first!
More green for St. Patty's Day! 

We were lucky to snag a table in the sun (must be all the lucky green we were consuming).
I hydrated from our walk with this ice cold beverage:
I am addicted to sunshine I think.  I just love the way a glass of ice lemon water looks on a sunny day!  Can there be anything better in this world?
Oh right, sorbet with a self-serve toppings bar!  We were hoping for a festive green apple flavor, but alas our green had to end somewhere.  This Ruby Red Grapefruit hit the spot, though.  Topped with granola, coconut and dark chocolate.  And at the last minute I couldn't resist the mandarin oranges. 

All good things come to an end, and this is when I had to go to work and drop Mr. Kummerow off at home.  Lucky for me, luck was on my side.  The kiddos mom called and asked if I minded taking Toby (the girl) to ride her pony Toby.  So you mean I get to go hang out with horses, continue hanging out in the sunshine and just relax while she rides.  Hmmm....let's think about that, Yes, Please!
Toby (the girl not, the horse) is a very skilled rider and it was so much fun to watch her!  When I was in elementary school I rode horses and took English lessons.  I probably wouldn't remember anything now and would likely fall off the horse, but even Toby (the girl) does that and she is very skilled!
Twice yesterday she took a spill but she made even that look graceful!  She popped right back up and onto her horse so quickly I missed the first one completely!

I did manage to do a little reading while sitting out in the sun, despite being so distracted by the lesson going on in front of me.
It was a wonderfully gorgeous day outside yesterday!  And you know what, today is going to be even better!
I think Spring might finally be here to stay!


What does your perfect day consist of?  This was as close to perfect as it gets for me!  Just last week I posted about another perfect day of mine.  Looks like a perfect day can consist of many different things for me.  But sunshine is usually involved!
