New Year New You {Win a pair of New Balance Running Shoes and Top}

New Year, New You!

That is why I have a fun surprise for you today!  Last year I commited to run a marathon for my New Year's Resolution.  I didn't run it in 2010, but with two weeks out from my marathon, I am almost there.

As part of my decision to run a marathon, I also signed up for SoleMates, a charity running program that raises money for Girls on the Run.  As part of this commitment, I signed on to raise a minimum of $262 that will help scholarship low-income girls to participate in this amazing program!

Girls on the Run changes the life of a girl by preparing her for a lifetime of self-esteem and healthy living.  If only I had this program as a girl, I might have saved a little wasted energy on all the negative self-talk and loathing.  My one regret of 2010 was all the time wasted wanting to be skinnier, prettier, happier.

Well in 2011, there will be no more time wasted.  I will complete my marathon and vow to be a more confident woman and be happy inside and out.  So won't you help me make this possible for myself and for hundreds of young girls who would love a scholarship for Girls on the Run?

As a fundraiser I have a fun raffle for you that will help you start 2011 off fresh as well!  This raffle is hosted by New Balance and the prize pack includes a pair of running shoes (your choice and size!) and a top!  This prize pack is worth over $100!

Here’s how the raffle works:
  • $2 gets you ONE raffle ticket.
  • $4 gets you TWO raffle tickets.
  • $8 gets you THREE raffle tickets!  It’s a deal!
  • Submit your payment on the Solemates Donation website – HERE.
  • The contest will run until Friday, January 7 at noon. I’ll contact the winner at lunchtime.
  • I will list everyone’s name on an Excel spreadsheet (one entry per $2, two entries per $4, and FIVE entries per $8), and then draw a winner using the Random Number Generator.
  • I will then mail you a gift certificate for the shoes and top that you can redeem at any New Balance store, online, or many other shoe merchants across the country! 
This new year, commit to a new you and start off right with a new pair of running shoes!  Perhaps you want to just get started walking, maybe you will be training for your next marathon...either way, these new shoes will take you where you need to go!

In other news, I tried my first traditional New Year's Black Eyed Peas and Collards.  I heard this was traditional, although I had never made it or eaten it before.  The traditional meal features black eyed peas which swell when cooked and are thought to symbolize prosperity.  The greens symbolize money and conventionally pork and cornbread is also served.

I found a BBQ Black Eyed Pea and Collards Wrap recipe in my new Veganomicon cookbook and it was delicious.  I made the Backyard BBQ Sauce and mixed with mushrooms, black eyed peas and wrapped in boiled collard greens to complete the recipe.  It was delicious and filling.  On the side we served Whipped Potatoes with Wild Mushroom and Sage infused Olive Oil.  The meal was the perfect start to the New Year and I can already feel the luckiness that is promised in this traditional meal!

Whipped Potatoes
serves 4-6 (1/2 cup servings)

4 medium organic russet potatoes
2 tbsp Wild Mushroom and Sage infused Olive Oil (or other olive oil)
1/4 cup Almond Milk

Peel and dice potatoes.  Boil for 10 minutes or until tender.  Drain and place in food processor.  Combine with olive oil and milk and process until smooth and whipped.  The texture will not be that of your traditional fluffy mashed potatoes and I'm not sure which I prefer, but it was smooth and delicious!

Note: For the most part I do not offer recipes out of cookbooks or that I had to pay for.  Not because I'm bitter I paid for it and you did not have to, but because these recipes are someone's work and they earn a living from that work.  I highly recommend the Veganomicon cookbook.  So far everything I have made from it is delicious, but I cannot give you the recipes on this blog because that would be infringing on the author's rights.

  4. Despite any southern roots, I am totally afraid of black-eyed peas due to ONE bad experience with them. I think I *might* be ready to try them again... your pic made them look delicious! Good luck on your marathon!
