Oh. My. Kale.

This week's Absolute Organics delivery came stocked with Kale! Remember the absurd amount of Collards we got last week (read: my own fault!). Well, I made the same mistake twice, and told them to bring on the greens!
Maybe I just really like greens and I'm just blaming the exorbitant amount on Absolute Organics to save me from husband finger pointing!  But seriously, these greens are enough to turn me green...but not in the sick kind of way!

What's a girl to do with all that green (too bad it doesn't translate into shopping like the other kind of green!)
I ripped right into the first bag, rinsing and drying and tearing into bite sized pieces.
A little olive oil, and a little salt...
Spread in a thin layer on a baking sheet...
Into the oven for 10 minutes at 400*
Out of the oven and into my mouth...one bag down, 5 to go!  So crunchy and yummy and easy to polish off a whole bag of greens.  I'm wondering what that translates into for vitamins and nutrients?

That's about 225 calories, 5 grams of fat (depending on how much oil you add), 500 mg sodium (depending on how much salt you add), 40 grams carbohydrates, 15 grams protein, 600-700% daily vitamin A and C.  (all numbers are pure estimates, individual results will vary)

Not bad stats for a crunchy, salty, satisfying treat!  I did, however, manage to save some for Mr. Kummerow!

Crispy Kale Chips
1 bunch kale
1 tbsp olive oil
pinch sea salt to taste

Thoroughly rinse and dry kale, chop into bite size pieces.  Stir in olive oil and salt.  Bake in thin layer on cookie sheet for 10 minutes in 400* oven.  Voila!

Served with a simple bean burrito for lunch and I was satisfied!

If you haven't tried Kale before, do so now.  If you haven't tried Kale chips before, do so now! I demand!  If you want to come to my house to try it...I still have plenty of kale to go around!

  1. OMG I get their delivery service too and while I said no kale, i got giant bags of spinach instead! I changed my % to 70/30 veggies to fruit and holy moly! Kind of the same (good) problem!
