Hump Day Woes

I am just so enamored by Prince William and Kate Middleton today! Apart from the morning news and the 48 hours special I am watching currently, my day has gone rather awful. I'm picking up the pieces and just trying to relax this evening...can I just say that traffic court sucks!

But yummy food that I didn't have to cook rocks!
This is leftovers with some fresh steamed kale and tomato-tahini sauce on top.  See, here are the leftovers, piled underneath:
Quinoa and Roasted Beets and Butternut Squash.  It was delicious!

Dinner was another great use of leftovers:
Piled high on a tortilla: rice, pumpkin, beets and butternut squash, kidney beans, more kale and Daiya cheese.  All wrapped up now:
And in my belly! Satisfied.  Dinner was followed by a cup of Kukicha tea and a Trail Mix Cookie.  And, like I said, all things royal from England.  I just love watching their lives unfold before my eyes.  Thank you for sharing your personal life with me Prince William!

Now I am enjoying an evening on the couch, anticipating Hell's Kitchen and all the yummy meals I will also make this week with my new Absolute Organics delivery:
Fresh and organic fruits and veggies on my doorstep.  Couldn't ask for anything more (maybe a dismissal of my speeding ticket).  I am now fascinating about the Coconut Ginger Carrot Soup I am going to make and more Green Bean Casserole
Well folks, that is all I can muster today.  I hope your Wednesday was better than mine.  And here's hoping my Thursday will be phenomenal.  And just so you know, that was my first speeding ticket ever.  I never get pulled over and I really feel justified in asking them to dismiss my ticket.  I'm not just whining.  I promise!

  1. I'm thinking next time (hopefully there won't be one) you should take one of those burritos and a trail mix cookie to the judge and things will be better! You know that when you get promoted to the very top of the DMV chain as "rude employee" they send you off to be a judge in traffic court. They can't help it. It's how God made them. Sorry your day was bad, but your food looks yummy! God bless!
