Trader Joe's

I think by now it is apparent, nothing good has been coming out of my kitchen as of late.  Not even a breakfast to speak of!  We have been eating, and mostly at home...but we have resorted to convenience foods for lack of time.  I know, I know, I am becoming the anti-Tanya...but I think this may be a lesson in eating healthy while pressed for time.  So I want to give you a run down of what we have been eating...while not exactly photogenic, it has been relatively healthy-- and by most standards, tasty.

Breakfast is the usual: oats or cereal with a bunch of mix-ins and toppings.  Remember, Vegan Overnight Oats are one of the quickest breakfasts! They are so tasty, you can prepare them the night before, and then there is no work in the morning! Just take out your oats and enjoy!

Lunch has been a little more complicated and consists of a combination of leftovers in the fridge.  For example, yesterday I mixed together cooked spaghetti noodles with leftover brussels sprouts and a dollop of Trader Joe's cilantro-jalopeno hummus.  I heated it all together in a bowl and topped with salsa.  Sounds odd right, but it was so good...even if not photo worthy!

For dinner we have been relying on convenience foods from the store.  So where does any whole-foods vegan shop for healthy convenience foods? Trader Joe's of course.  Mr. Kummerow and I took a road trip to Charlotte (yes we have time to go to Charlotte to grocery shop, but not enough time to actually cook--priorities people!).  I can always rely on TJ's for healthy and quick meals.  I had ulterior motives for visiting TJ's also, but that will have to be another post.  Here are some of the goodies we purchased:
I don't like purchasing processed foods for several reasons: the packaging is wasteful, and there always seems to be ingredients that don't sound like food and I can't pronounce.  But occasionally, it is ok to swap your sanity for a bit of cardboard that can be recycled.  And I can be assured that by shopping at Trader Joe's my processed food comes with less of those unmentionable ingredients!

So that explains why you haven't seen any homemade dinner recipes in quite some time.   I promise I will be back in full swing soon enough.  In fact, as we speak I am cooking up ideas for a little luncheon I'm hosting this Sunday with my in-laws.
