Instead, I decided to fill my hour with my favorite past-time...blogging of course. And as I sat down to write this entry, I noticed how many photos were on my camera of meals I had not posted yet. Let's play catch up!
2 slices cinnamon raisin bread
1 tablespoon Almond Milk
Heat pan on medium and spray with cooking spray
Meanwhile, mash banana in bowl with almond milk
Dip each slice of cinnamon raisin bread in banana mixture, coating both sides well.
Place on pan and cook 2-3 minutes on each side until brown and crispy.
Note: sometimes the outside won't crisp up as much as I like, so I will turn the broiler on and put the whole pan in the oven for 2-3 minutes, checking frequently, just to crisp the top of the bread.
Top your french toast with Pumpkin Butter and "Baked" Pears for a harvest touch:
Pumpkin Butter for One:
1/4 cup pumpkin puree (not pumpkin pie mix)
1 tablespoon brown rice syrup (you can substitute agave nectar or maple syrup)
1 tsp pumpkin pie spice
1 tsp molasses
Stir together and spread on toast
"Baked" Pears for One
Core and sliced a pear. Place on microwave safe plate in microwave for 2 minutes, checking every 30 seconds. Top your toast and sprinkle with cinnamon!
Brown Rice (cooked in my Tupperware microwave rice cooker)
Steamed Rainbow Chard
Cucumber Wontons (courtesy of Trader Joe)
Black Bean Hummus sauce (stir together equal amounts of packaged black bean soup and your choice of hummus- we used jalopeno cilantro hummus, both items from TJ's)
Here is a fun treat I sampled at Fake It Foods in Statesville: Almond Dream "Lil Dramers"
Well that is all for this post...you will likely see at least one more from me today--remember, I'm not working! I have one more dinner recipe to share with you, and I also have some big news...here's a hint: my run was quite different this morning than usual! Oh and did you see my facebook or twitter status yesterday? I have the best boss ever! Any guesses what the big news is? I promise I won't leave you hanging too long!
