Catch up! Check out this breakfast recipe! {vegan french toast-pumpkin butter-baked pears}

As I was finally sitting down at my desk to get to work, I realized I only have about an hour before I pick up Bob from school (early release days). Why bother starting a to-do list when all I will likely accomplish is actually writing the list. Enter, a wonderful Wednesday off work. (How about that for alliteration!)

Instead, I decided to fill my hour with my favorite past-time...blogging of course.  And as I sat down to write this entry, I noticed how many photos were on my camera of meals I had not posted yet.  Let's play catch up!

Banana French Toast for One
2 slices cinnamon raisin bread
1 banana
1 tablespoon Almond Milk
cooking spray

Heat pan on medium and spray with cooking spray
Meanwhile, mash banana in bowl with almond milk
Dip each slice of cinnamon raisin bread in banana mixture, coating both sides well.
Place on pan and cook 2-3 minutes on each side until brown and crispy.

Note: sometimes the outside won't crisp up as much as I like, so I will turn the broiler on and put the whole pan in the oven for 2-3 minutes, checking frequently, just to crisp the top of the bread.

Top your french toast with Pumpkin Butter and "Baked" Pears for a harvest touch:

Pumpkin Butter for One:
1/4 cup pumpkin puree (not pumpkin pie mix)
1 tablespoon brown rice syrup (you can substitute agave nectar or maple syrup)
1 tsp pumpkin pie spice
1 tsp molasses

Stir together and spread on toast

"Baked" Pears for One
1 pear

Core and sliced a pear.  Place on microwave safe plate in microwave for 2 minutes, checking every 30 seconds.  Top your toast and sprinkle with cinnamon!

Mr. Kummerow's Quick and Easy Dinner
Brown Rice (cooked in my Tupperware microwave rice cooker)
Steamed Rainbow Chard
Cucumber Wontons (courtesy of Trader Joe)
Black Bean Hummus sauce (stir together equal amounts of packaged black bean soup and your choice of hummus- we used jalopeno cilantro hummus, both items from TJ's)
A Masterpiece!
This was lunch the other day:
More steamed chard topped with leftover spaghetti squash and tomato-tahini sauce.  Another quick and easy meal and so delicious!

I'm telling you, this store is fantastic: local owners, great deals and they let you sample pretty much anything before you buy it.  I am always hesitant about ice-cream treats because I don't like the flavor of soy very much.  So I tried these Almond Dream bars and they were terrific! I like how small they are, just enough sweetness, but not too much.  You should definitely check these out.  And if you are local, buy them at Fake It Foods to support local business!
