Presents on my doorstep!

Look what I found yesterday on my doorstep!
What could it be?
The suspense is killing you, isn't it?
Ta-da! Did I mention I burnt up the last food processor? Yup, sure did.  It was just a little 2 or 3 cup cuisinart and I used it for many years.  I have been without a food processor for weeks now, and it has been killing me.  Then my wonderful father-in-law called to say he was out shopping with his girlfriend and they were thinking of me when they passed a juicer.  They offered me the juicer first, but I declined (I know, I'm crazy, but I would just rather eat my veggies whole!).  But I had also mentioned I didn't have a food processor so he brought that up.  Score! New Food Processor for me! Thanks Dave and Lisa!

Of course we wasted no time putting it to work! And what was the first thing on the list? Duh! Banana Soft Serve!
I got right to work last night slicing bananas (good timing, because my bananas were rotting!) and froze them overnight.  I also mixed a bowl of oats and put them in the fridge overnight.  So two great things happened this morning:  no running! (It is my rest day) and Pumpkin Vegan Overnight Oats with Banana Soft Serve! Couldn't ask for a better morning! 
Pumpkin Vegan Overnight Oats
1/3 cup oats
1/3 cup pumpkin puree
1 tbsp chia seeds
1 tsp pumpkin pie spice
2 tbsp raisins
1 cup Almond Milk

Mix all ingredients in a bowl and store in fridge overnight. (I omitted sugar from my previous pumpkin vegan overnight oat recipes, because I knew the sweetness of the banana would suffice)

Banana Soft Serve
1 frozen banana sliced
1 tbsp Almond Milk

Process frozen banana until fine.  Add milk and continue to process until it begins to fluff up and resemble soft serve.  (I used Coconut Milk Creamer in the past and it works better to fluff up the banana, but milk will work too.)

Layer oats with soft serve and sprinkle walnuts and raisins on top.  Delish!
Last night I cooked an easy but healthy pasta dish for Bob and Toby.
Guess what? They ate all their green beans! And I'm pretty sure they had no idea they were eating whole wheat pasta!  The sauce is just lean ground turkey browned in a pan, drained of juices.  I added a can of tomato sauce with Italian seasonings and salt and pepper to taste.  Green beans are out of a can.  Their dad promises once the cans of veggies are gone I can start having fresh and frozen veggies!
