New breakfast recipe!

Oh my goodness! Look at this beauty I found on my point and shoot camera. It has been sitting there for weeks!
This just shows that you can find a relatively healthy meal even at a "bar and grill" scene.  I went to Fox and Hound with some of my training buddies a few weeks ago and they made this taco salad for me.  In the mix is black beans, avacado, mushrooms, jalopenos, tomatoes, black olives- all on a bed of lettuce in tortilla bowl.  The bowl aside, this meal is super good for you!

This morning I made a delightful breakfast.  I have been meaning to try this recipe for weeks, but I get caught up in the oats each morning.
Well this still incorporates the oats and all of my other favs from VOO, but just mixes it up in a different way:

Banana Scramble
inspired by Edible Perspective

3 tbsp oats
3 tbsp Almond Milk
1 tbsp Dark Chocolate Peanut Butter
1 tbsp Chia Goodness
1 tbsp pepitas
1/2 banana mashed
1 tbsp cinnamon

Mix all ingredients in a bowl and plop in three small "pancakes" on griddle.
Cook on each side 2-3 minutes until brown.  Serve with jelly, peanut butter, sliced bananas, honey, syrup or any other topping of your liking!
