Lunch Post

A little lunch post for you...
I love salads made at home after a large grocery shopping trip.  There are so many great, fresh and organic ingredients I am just dying to throw into it!  Today's mix featured: spinach, cherry tomatoes, an orange, shredded carrot, "Student Food" trail mix (it was on sale for $1.99/lb at Healthy Home Markets) and a dressing a just created out of hummus and shoyu.  That's all.  Just hummus and shoyu (you could also use soy sauce).  Yummy!
The dressing and oranges gave the salad an asian quality.

Hummus-Shoyu dressing
1/4 cup Classic Hummus or store bought hummus
2 tbsp. shoyu sauce

Mix well and drizzle on salad.  So healthy and hearty and good!
