Last Labor Day weekend post

Finally, one whole week later, I will finish my Labor Day weekend posts!

Sunday with the Kummerow's was divine. Remember my post about church and the wonderful guest speaker at Heartland Community Church? Well that was just the beginning to a wonderful day.  We came home to these:
A lovely mimosa! And the beginnings of a fabulous brunch:
These sandwiches were per my suggestion.  Totally a made-up idea that really had no room for error.

Dark Chocolate Peanut Butter and Banana grilled Sandwiches on Cinnamon Bread
(a very long title but only a stately title will do for such a stately meal!)

Dark Chocolate Peanut Butter
Peanut Butter
Cinnamon Bread

Spread Peanut Butter on one slice of bread
Spread Dark Chocolate Peanut Butter on another Slice Bread
Slice bananas and lay on top of PB
Sandwich together and cook on a griddle or pan like a grilled cheese.
(you can spread vegan butter on outside of sandwich like we did, or grill in a non-stick pan)

For dinner we had a nice (pre) Labor Day BBQ, complete with stuffed portabella mushrooms and corn on the cob.
And more of Julia's chopped salad.

Stuffed Portabella Mushrooms

Italian Dressing
4 large portabellas
1 can artichoke hearts
1 box frozen chopped spinach thawed.
2 garlic cloves
Fresh ground black pepper to taste
Carefully rince portabellas and remove stems leaving a hole in the center.  Marinate mushrooms in Italian dressing for an hour or more.  Chop artichoke hearts and mix with chopped spinach.  Stir in minced garlic cloves and fresh ground pepper.  Fill portabellas with spinach and artichoke mix.  Bake in 350* oven for 10 minutes and finish on a hot grill for 5-10 minutes.

Dinner was lovely with family.  Mr. Kummerow was home, Jacqui (sister-in-law) came in from Chicago with her new puppy:

At the end of the evening I was so satisfied! All my favorite foods and many of my favorite people all in one day!  I was not excited to leave and drive home the next day but alas all good things come to an end.  See my post here about traveling home and my favorite treats on the road.
