Millet stuffed apples- yummy!

Day 2 on the new job: Unfortunately no Discovery Place. The boy's ankle is not in good shape. Instead we are enjoying the morning on the couch...very active, huh? Well, he got a new movie- Diary of a Wimpy Kid. I'm hoping we will go out for a healthy lunch and maybe something fun this afternoon.

I asked them what their blog nicknames should be and I got "Bob" from the boy and "Fred" from the girl. Then she quickly changed it to "Toby" the name of her horse. We'll give them the rest of the day to solidify these names!

Before work today I struggled through 3 miles with Angie on the trails. I must be exhausted after the double long run weekend and the faster-than-Tanya-can-go pace from yesterday. And breakfast was another disappointment...note to self: don't forget the chia seeds in your Vegan Overnight Oats! I suffered through the runny oats and used peanut butter to make it doable!

Last night's dinner was quite a better experience:

Millet Stuffed Apples

4 medium sized apples, sliced in half
1/2 cup millet
1 carrot grated
1/4 cup raisins
2 tsp cinnamon
1 tsp nutmeg
1 tsp chipotle chili powder (optional)

Boil 1 and 1/2 cup water. Add millet and simmer, covered for 20-25 minutes
Scoop core out of each apple half and discard. Scoop out center, leaving a sturdy apple cup.
In bowl combine apple, carrots, raisins, cinnamon, nutmeg and millet.
Scoop two heaping scoops of mixture into each apple half. Sprinkle tops with Chipotle Chili Powder if you would like a little spice. Place apples in glass baking dish and bake at 350* for 30-35 minutes until apples are soft.










We served with a fresh salad and a kiss. Enjoy!
