Absolute Organics and Banana Soft Serve!

Book accomplishment #3: Book of Psalms-Old Testament!

Wow! When you put your mind to something, you really can achieve anything. Next up: Proverbs. Sometimes I don't go in order in the bible, but today I was really looking forward to reading Proverbs. So much- I just couldn't put it down. I read 12 whole chapters!

Here is what inspired the obsessive reading:
"The fear of the Lord is the beginning of knowledge, but fools despise wisdom and discipline."
Proverbs 1:7

Proverbs is full of so many great pieces of advice/wisdom. I could quote it all day!

So speaking of discipline, sometimes eating is a discipline all its own. Well if this breakfast is part of discipline- then Proverbs is right: "He who heeds discipline shows the way to life..." (10:17)


My first attempt at Vegan Overnight Oats with Banana Soft Serve...inspired and developed by these two lovely bloggers: Angela and Gena! Thank you ladies for this! I'm pretty sure my life changed forever this morning!










Such yummy goodness! Light and fluffy and delicious! Vegan Overnight Oats layered with Banana Soft Serve, topped with frozen grapes and a sprinkling of cinnamon!



























































Simple Vegan Overnight Oats
1/2 cup oats
1 cup almond milk
2 tbsp chia seeds

In a large bowl mix all ingredients and store in refrigerator overnight.

Simple Banana Soft Serve

1 1/2 frozen bananas chopped
1 tsp vanilla
1 tbsp coconut milk creamer

Process frozen bananas in food processor until soft. Add creamer and vanilla and process until light and fluffy and "whipped". (I promise this works. I didn't believe it either until I tried it for myself. Trust me, this is the best thing you will ever eat!)

My stomach jumped and flipped and danced and sang when I finished making the soft serve. It was all I could do to not gobble it up before getting it in a fancy glass and photographing it- of course I couldn't find my camera either...and that took some extra time. I layered it in, and topped with frozen grapes and cinnamon. But there are endless combinations here. Check out Angela's blog for more ideas!




After several hours of joyful, inspired work (only because of my delicious breakfast) I ate a very late lunch of leftovers...I swear this Polenta Casserole gets better each day I heat it up!

















Then the doorbell rang. My organic produce delivery was here! After a failed CSA try this summer, I found Absolute Organics- an organic produce delivery company. We ordered the big box of mostly vegetables (75% veggies/25% fruit) and decided to try it out for a week. Here is our loot:

1 lb. grapes
5-6 fuji apples
5 pluots (combo apricot/plum)
3 avacados
3 large tomatoes
8 zucchini
3 cucumber
2 heads green leaf lettuce
3 bananas
2 eggplant
